No bake and healthy chocolate chip cookies

I came across this recipe on my little sisters hard drive whilst on holiday in Cyprus. She is a super mama and a creative food/desert person. I admire her passion and determination to feed her children treats that are healthy not to mention her abilities as a mama. To all you mamas out there doing a fabulous job and not bending to the likes of nestle or even plain sugar - I salute you.

No Bake Healthy Choc Chip Cookies

Ingredients: Cookie dough: 1 3/4 cups/450 g ground raw cashews 3/4 cup/200 g ground raw oats 1/4 cup/60 ml maple syrup 2 teaspoon vanilla extract 1/4 cup/60 ml coconut oil Pinch of Himalayan salt, or more to taste No bake chocolate chips: 2 Tbsp./30 ml coconut oil 1 cup/128 g cacao powder 1/4 cup/60 ml. maple syrup 2 teaspoon vanilla extract Directions: For the Dough: 1.) Grind up raw cashews and raw oats in a food processor or blender. 2.) Place all cookie dough ingredients into a large bowl and mix with a spoon. 3.) Mix until a dough forms and refrigerate dough while you make the chocolate chips. *For the Chocolate Chips: 4.) Mix all chocolate chip ingredients together in a medium sized bowl. 5.) Roll the dough out onto parchment paper and place in the freezer for about 30 minutes. 6.) When chocolate is frozen, cut into chips. 7.) Mix chips into dough and form into mini cookie shapes, or small balls. 8.) Sprinkle a little Himalayan salt on each cookie and enjoy!
